3 Ingredient Peanut Butter Cookies

Ingredients

- 1 cup unsweetened peanut butter

- 1/2 cup Powdered Swerve

- 1 egg

Optional Ingredients:

- 1/4 cup sugar free Chocolate Chips

- 1/4 cup chopped peanuts

Directions

1. Preheat oven to 350 degrees.
2. Line a baking sheet with parchment paper.
3. Soften the peanut butter in the microwave in 20 second increments, being careful not to melt it completely.
4. Place peanut butter, sweetener and the egg in a large bowl and combine completely. (A mixer or food processor works well here.)
5. Form into 1" balls and place on the cookie sheet.
6. Flatten each ball with the tines of a fork.
7. Bake for 12-15 minutes until golden brown.
8. Let cool for at least 5 minutes before removing from the pan to a cooling rack.

Optional two ingredients:
- Add the chocolate chips and peanuts to the dough before shaping into balls.
