4 Ingredient Butter Cookies

Ingredients

- 1 cup Almond Flour

- 3 Tbsp Powdered Swerve

- 3 Tbsp Salted Butter, softened

- 1 tsp Vanilla Extract

Directions

1. Preheat oven to 350 degrees.
2. Line a baking sheet with parchment paper or use a silicone mat.
3. Combine all ingredients by hand or use the paddle of a Kitchenaid mixer. It is important to fully incorporate the butter into the dough.
4. Use a spoon, or a 1" cookie scoop to make 10 balls.
5. Place on the baking sheet 2" apart.
6. Using a fork, make a criss-cross pattern on each cookie, flattening each to 1/4 inch.
7. Bake at 350 degrees until cookies are golden brown, about 10 minutes. The cookies will by very soft coming out of the oven.
8. Allow cookies to completely cool on the baking sheet before moving them to a cooling rack or container.

Optional Flavors:
- Top with sliced almond and replace vanilla with 1 tsp almond extract
- Add 1 Tbsp fresh lemon juice and 2 tsp lemon zest
- Add 1/4 cup chocolate chips and/or 2 Tbsp toasted unsweetened coconut to the base before shaping.
- Dust cookies before baking with cinnamon to make Snickerdoodles
- Dip 1/2 of each finished and cooled cookie into 1/2 cup of melted Lilly's Chocolate Chips
