Ingredients

- 1 oz unsweetened chocolate, chopped

- 2 tsp coconut oil

- 4 Tbsp unsalted butter

- 1 1/2 oz plus 1 additional Tbsp Cream Cheese, softened

- 1/3 cup powdered Swerve

- 1 T Cocoa Powder

- 1/2 tsp Vanilla extract

- 1/4 cup heavy whipping cream, at room temperature

Directions

1. Combine the chocolate with the coconut oil and slowly and melt them either in the microwave in 20 seconds increments or on the stove top. over a low heat. Remove from heat and stir until smooth.
2. In a large bowl beat the butter and cream cheese until smooth.
2. Beat in the sweetener and cocoa powder until well combined.
3. Add the melted chocolate and vanilla and beat until smooth. The mixture will be thick.
4. Add enough cream, 1 tablespoon at a time to achieve the desired consistency.

Notes

This frosting is smooth enough to pipe and is delicious on cupcakes, and brownies.
