Chocolate Chip Cookies

Ingredients

- 2 Cups Blanched Almond Flour

- 1 tsp Baking Soda

- 1/2 cup butter, softened

- 1/2 cup Brown Swerve, packed

- 2 tsp vanilla

- 1/4 cup Keto Chocolate chips

- 1/4 cup chopped pecans, opt.

Directions

1. Pre-heat oven to 350 degrees
2. Line two baking sheets with parchment paper
3. Whisk together almond flour and baking powder. Set Aside.
4. Whip butter, sweetener and vanilla in a mixer until light and airy.
5. Add dry ingredients in 3 parts, scraping the bowl often.
6. Fold in chocolate chips and nuts, if using.
7. Drop by tablespoons onto the cooking sheet, about one inch apart.
7. Bake for 12 minutes until the edges begin to brown. The cookies will continue to set out of the oven.
8. Let cool for 10 minutes on the cooking sheet before transferring to a cooling rack or plate.

Notes

These cookies can be made larger using an ice cream scoop. If that is the case, slightly flatten the dough with your fingers and add up to 3 minutes of cooking time.
