Ingredients

• 6 Tbsp Salted Butter

• ¼ cup + 1 Tbsp Brown Sugar Substitute

• ¼ cup + 1 Tbsp Granulated Sugar Substitute

• 1 large egg, room temperature

• 1 tsp Vanilla extract

• 1 cup blanched almond flour

• 1 Tbsp grass fed gelatin

• ¾ tsp Baking powder

• ½ tsp Baking soda

• ¼ tsp Salt

• ½ cup unsweetened shredded coconut

• ½ cup chopped pecans

• 1/3 cup sugar-free chocolate chips

Directions

1. Set oven racks to mid and upper mid-levels
2. Preheat oven to 325 degrees
3. Line two cookie sheets with parchment paper
4. Beat the butter and sweeteners until lightened and fluffy, about 2 minutes
5. Beat in the egg and vanilla
6. Add all the dry ingredients
7. Fold in the nuts and chocolate chips
8. Form the dough into 2-inch balls and place at least 3 inches apart on the baking sheets
9. Press the balls down with the palm of your hand until about ½ inch thick
10. Bake for 15-20 minutes rotating the pans halfway through the cooking process until the edges of the cookies are golden brown.
11. Remove from the oven and let cool completely on the baking sheet
