Oven Roasted Greek Cauliflower

Ingredients

- 1 Medium Head of Cauliflower

- 2 Tbsp Fresh Parsley, chopped

- 2 Tbsp butter, melted

- 2 Tbsp Extra Virgin olive oil

- 2 tsp Garlic Powder

- 1 tsp Onion flakes

- 1 tsp salt

- 2 tsp dried (or fresh) Oregano

- 1 Tbsp fresh lemon juice

- 1/2 lemon sliced

Directions

1. Preheat the oven to 425 degrees.
2. Remove any leaves on the cauliflower head. Using a sharp knife, carefully cut off the stem and into the base to create a small well on the bottom of the head but leaving it intact.
3. Mix all ingredients, except lemon slices.
4. Line the bottom of a glass baking pan with foil. Place the head of cauliflower on the foil and using a brush, completely coat the head, pouring over the remainder over the cauliflower.
5. Place the lemon slices in the bottom of the pan.
6. Cover the top of the baking dish with another layer of aluminum foil and seal tightly.
7. Bake covered for 30 minutes.
8. Remove cover, and using a spoon, pour any juices from the bottom of the pan back onto the cauliflower.
9. Bake uncovered an additional 30 minutes until a knife cuts cleanly through the middle of the head.

Notes

This same recipe can be used for thick cauliflower steaks or florets. Adjust cooking time accordingly.
