Ingredients
4 Tbsp salted butter
1 Tbsp Baking Powder
2 Eggs
1/3 cup sour cream
1 1/2 cup blanched almond flour
1/3 cup shredded cheddar
Directions
Pre-heat oven to 400 degrees
Melt butter in the microwave in 20 second increments. While still hot, whisk in the baking powder. Allow to foam up 1-2 minutes.
Add the eggs and sour cream, whisking to fully incorporate.
Add almond flour, 1/2 cup at a time and fully incorporate.
Fold in cheddar cheese.
Spoon into muffin tin lined with parchment cups.
Bake for 15 minutes until brown.
