Key Lime Tart with Cinnamon Pecans

Ingredients

For the Crust:

- 1 cup finely chopped pecans

- 2 Tbsp salted butter, melted

- 1 tsp granulated monk fruit

For the Tart Filling:

- 8 oz full fat cream cheese, room temperature

- 1 1/2 cup heavy whipping cream

- 2/3 cup powered Sweetener

- 5 tsp key lime zest

- 3 Tbsp key lime juice

- 1 tsp lime extract

For the Tart Topping:

- 1/4 cup finely chopped pecans

- 1 Tbsp granulated monk fruit

- 1 Tbsp cinnamon

Directions

1. Preheat the oven to 350 degrees.
2. Grease the bottom and sides of a pie plate.
3. Smooth the pecans along the bottom of the pan and up the sides.
4. Bake for 10 minutes and allow to cool completely.
5. In a large bowl, beat the whipping cream until stiff peaks form.
6. In a separate bowl combine remaining ingredients and whip until smooth.
7. Fold cheese mixture into whipped cream until fully incorporated.
8. Pour tart filling into the cooled crust and smooth out the top.
9. In a small saucepan, toast the cinnamon pecan topping until fragrant and golden brown. Let cool.

10. Sprinkle cinnamon pecans on top of the tart.
11. Place tart in the freezer or refrigerator. If frozen, remove the tart from the freezer and place on the counter until thawed and ready to serve.

Notes

This tart recipe is easily cut in half by using individual ramikens.
