Brownie Cheesecake Bites

Ingredients
Brownie Base
• ¼ cup creamy Almond butter
• ¼ cup coconut oil, very softened
• 3 Tbsp powdered erythritol-based sweetener
• ¾ cup Blanched Almond Flour
• ¼ cup cocoa powder
• 1 tsp Vanilla extract
• 1/8 tsp salt
• 1-2 Tbsp water
Cheesecake Topper
• 1 - 8 oz package of cream cheese, softened
• ¼ cup powdered erythritol-based sweetener
• ½ tsp Vanilla extract
• 2T Heavy Cream
• Sliced berries (Optional)
Directions
To Make the Brownie Base
1. Line a glass or metal loaf pan with parchment on all sides
2. Mix all base ingredients together until it pulls together like a dough
3. Add just enough water to create a firm brownie base.
4. Press in the base until evenly across the pan. Set into the fridge while preparing the cheesecake topper
To Make the Cheesecake Topper
1. In a medium bowl or Kitchen aid, beat the cream cheese until smooth. Add sweetener and beat until fully incorporated.
2. Beat in the remaining ingredients.
3. Pour the topper over the brownie base and smooth over until even across the pan.
4. Chill for at least 2 hours.
5. Carefully lift out of the pan and cut into 9 squares.
