Ingredients

• 2 Tbsp coconut oil, Solid (do not melt)

• 4 Tbsp unsalted butter, softened but not melted

• 1 ½ Tbsp granulated sweetener (Swerve is preferred)

• 1 tsp vanilla

• 2 egg yolks, slightly beaten

• ½ cup Sugar Free Chocolate Chips (Lilly’s is preferred)

• ½ cup unsweetened coconut flakes

• ¼ cup chopped pecans

• ¼ cup chopped walnuts

• Sea Salt flakes (optional)

Description

A quick flourless treat that uses simple ingredients

Directions

1. Preheat oven to 350 degrees
2. Line a baking sheet with parchment paper
3. Mix coconut oil, butter and sweetener until completely blended and light
4. Add vanilla and eggs and completely incorporate.
5. Add chocolate chips, coconut and nuts.
6. Arrange on baking sheet 2 inches apart using a 2 tbsp cookie scoop or a spoon
7. Bake for 12-14 minutes until golden brown.
8. Allow to cool slightly. (The oil separation is normal)
9. Sprinkle with flake salt (optional)
10. Finish cooling on a rack or plate lined with a paper towel. Repeat, as desired.
