Old Fashioned Peanut Butter Cookies

Ingredients

• ½ cup sugar free creamy peanut butter

• ¼ cup salted butter, softened

• ¼ cup granulated sweetener (I prefer Swerve)

• ¼ brown sugar sweetener (I prefer Swerve)

• 1 egg

• 1 tsp vanilla extract

• 1 cup blanched almond flour

• ¼ cup sugar free peanut butter powder

• ½ tsp baking soda

• Dash salt

Directions

1. Preheat oven to 325 degrees
2. Line two baking sheets with parchment paper
3. Cream together peanut butter and butter until light and fluffy
4. Add sweeteners, egg and vanilla extract. Combine until incorporated.
5. Add all dry ingredients and combine until a smooth dough is achieved.
6. Using a 1” scoop, drop cookies onto the baking sheet at least 2 inches apart.
7. Using a fork, make the cross pattern on each cookie.
8. Place baking sheets into the oven, one in the middle rack and one on the upper middle shelf.
9. Bake 7 minutes and flip shelves. Bake 7 minutes more until edges start to brown.
10. Remove from oven and allow to cool at least 5 minutes until moving cookies to a cooling rack. Let cool completely.
