Theresa's Thinner Mints

Ingredients

• 2 Tbsp unsweetened cocoa powder

• 1 Cup Almond Flour

• 1/8 tsp salt

• 1 tsp vanilla extract

• ½ tsp maple extract

• 1/8 tsp peppermint extract

• 3 Tbsp Sugar Free Maple Syrup (Lakanto recommended)

• 3 Tbsp Water

• ½ cup sugar free chocolate chips

• 2 tsp solid coconut oil

• ¼ tsp Peppermint extract

Directions

1. Preheat oven to 350 degrees
2. Line a baking sheet with parchment paper
3. Mix all dry ingredients until fully incorporated
4. Add the vanilla extract, maple syrup and the 1/8 tsp peppermint extract
5. Incorporate completely and add enough of the water to create a pliable dough.
6. Bake on parchment paper for 7 minutes.
7. Remove from the oven and allow to cool completely.
8. Melt the chocolate chips, coconut oil and ¼ tsp of the peppermint extract over a double boiler.
9. Using a fork, completely coat both sides of the cookie and return to the parchment paper.
10. Place cookies in the refrigerator until coating is hard and completely cool.
