Tuscan Salmon
Ingredients
· 4 pieces Salmon, skin removed
· 2 Tbsp olive Oil
· Salt and pepper
· 2 Tbsp butter
· 2 cloves of garlic, crushed
· 1 cup fresh finely diced tomatoes
· 2 cups fresh or 1 cup frozen spinach (defrosted and drained)
· 1 cup heavy cream
· 2 Tbsp fresh shredded basil
· 2 Tbsp fresh chopped parsley
· ½ cup freshly grated Parmesan cheese
· Juice of ½ fresh lemon
Directions
Sprinkle the salmon with salt and pepper.
Heat olive oil in a saucepan over medium heat. Place salmon face down in oil and cook for 6 minutes. Flip the salmon and cook for an additional 3 minutes.
Remove from the pan and set aside.
Add butter to the pan, along with garlic, parsley and ½ the basil. Sprinkle with a bit more salt and pepper.
Sauté for 2 minutes and add spinach, tomatoes, and heavy cream.
Add grated Parmesan and simmer on low heat for 5 minutes.
Return salmon to the pan and simmer, covered, for an additional 5 minutes.
Before serving, sprinkle with remaining basil and squeeze fresh lemon over fish.
